I have an issue between the software and the USB connected unit. It sometimes cycles on and off the screen trying to start and i noticed when it does this there are no values in the fields within EasyWeather Plus. Only cure is to remove a battery on the desktop unit and reset. This happens every 4-5 days. I have disabled APM on the USB ports, updated logging interval to 15mins to no avail.
My weather station uploads my weather data to Wunderground and can do this even when the PC is off, but what I would like is software that imports the data back from Wunderground (or Ecowitt) so that I can store historic data on my PC. Can EasyweatherPlus do this? The weather station is a Tesa WS2900-Pro.

Yes, EasyWeatherPlus can import data from Wunderground or Ecowitt, allowing you to store historic weather data on your PC.
I've downloaded version 2.0 of the EasyWeatherPlus and it works just fine. The operating system where I installed the application is Windows 10 64bit.
When I installed it, I've used Run as Administrator on the main setup package. Doing so will provide administrative permissions to the package to install everything on the system partition.
This question has already been tackled here. Follow the instructions on the previous answer to learn how to run the software on Windows 7 64bit. When installing, right click the setup package and choose Run as Administrator. This will allow EasyWeatherPlus to copy all the files to the correct directory.
As the developer designed this software to run only on Windows platform, you will have to install Boot camp or Parallels Desktop 7 which will allow you to run Windows-based programs on your Mac computer. After you have installed one of the above mentioned programs, you can install and run EasyWeatherPlus. It is available for download through the application page of Software Informer.
Installed EasyWeatherPlus V1 on my laptop and I want to back up the data file - but I can't find it. What's the file name and default location?

The default location for EasyWeatherPlus V1 is: C:\Program Files (x86)\EasyWeatherPlus. Being a 64bit system, the application is installed in x86 version of Program Files.
To export the data simply go to Record > History and then use the Export function to backup the data.
The program isn't showing the outside temperature. Is there a way to fix this?

The EasyWeatherPlus is developed to communicate with the weather stations and provide weather data. According to the User Manual, the weather station is communicating with the PC through the USB cable. If there isn't displayed any data, you might experience problems with the connection. In this matter, it's advised to use the manual, in order to properly set up the program and the weather station. You can find the manual in installation folder of the application.
